With the exception of some salamander species, activity at these near-freezing body temperatures is found only among fishes, a fact that makes ice fishing possible. Such acclimation appears to take place through a gradual adjustment of major enzyme systems as habitats warm and cool throughout the year. This principle has practical application in freshwater fish aquariums. When wild fishes are brought directly into room temperature tanks, they often die of thermal shock because no time is allowed for a thermal adjustment to take place.

A superior or dorsally opening mouth is found in those species that obtain most of their food by surface skimming, whereas an inferior or ventrally opening mouth denotes bottom foraging. The terminal mouth is by far the most common feeding structure. One additional external structure of California freshwater fishes is the operculum, a large, bony plate with a thin, flexible posterior edge that completely covers the gill chamber. Fishes breathe water by closing the opercular flap and opening the mouth while lowering the floor of the throat.
